Johhny,

Get a timing light with the adjustable advance on the light and disconnect your vacuum advance. You should be able to determine when the advanvce stops by slowly increasing the engine speed until the timing stops advancing. Once it stops check the timing advance with the light and subtract the initial timing from that to determine how much mechanical advance you have. If you want a curve just gather the timing measurements at 500 rpm intervals.
