Why do people BLOB on RTV silicone and still use a gasket when joining parts . Ive seen this done so many times and had to redo jobs because someone did this and it leaked. I just use a gasket and it doesnt leak so what gives am I missing something.

I think it's "mores law" at work

My pet peeve is people who use it on water pump gaskets. The goo all squeezes out and either goes inside the water jacket and winds up in the radiator, or squishes out.

When you remove a pump put on this way there isn't a trace of sealer left on the gasket.
I put them on dry and have never had a leak. I do use a non hardening sealer on the bolt threads.
And don't get me started on exhaust systems.
