Curious to know the purpose of the spring like material over some brake lines but not on all.

Its not really a spring, but a protective wire wrapping meant to keep the lines from being abraded/punctured by foreign objects in exposed areas.

It also aids in making the bends, to keep the tubing from kinking. Some replacement brake tubing I've bought had it down the length of the tube... really easy to bend, and even straighten, w/o kinking.
And I've gotten universal A.I.R. exhaust tubing which came with a similar spring with directions to use it as such.
