I am swapping my Victor Jr intake with a 2701 Performer EPS better mated to my 1406 600CFM Edelbrock carb. The current setup has a 1" spacer between the carb and the intake. You can see it on page two of my photos below.

Should I keep this (Morosso) spacer on the new setup? What function does it serve?
 
Can't quite tell from the pic but my guess is that the spacer is a heat insulator and is there to keep some of the heat off the carburetor in order to keep the fuel from boiling out. Those Eddies 1406-7 are notorious for that (I have one) as the fuel bowls sit directly on top of the intake and absorb heat like crazy. Unlike the Holley where the fuel bowls have a gap between them and the intake. Is the spacer made out of a "corky" substance? If so, I would leave the spacer on there for sure.

The spacers do two things. They increase your plenum volume and reduce heat transfer. As previously mentioned, I would keep the spacer as long as hood clearance allows, to reduce heat transfer from the intake to the carb. I noticed a difference in my car when I put the holley heat shield on mine.
