Filled up the 68 today all the way to the top for the first time. It’s been decades since I’ve seen a full reading in a 1st gen, is this correct or do I have a sender/gauge mismatch? Worried about where empty really is now…

Mine did that….and then fell like top fuel dragster at 330.

<shrug> worked OK, got to the show and back today, 140 miles round trip. Slowly dropped to ‘F’ as I drove, and continued below there. Gauge reads just a little over half tank now. I guess I don’t let it get below 1/4 tank?
 
Having owned 4 Gen 1 Camaros and various other early Chevys, I would find your gas gauge normal. You may improve the readings by cleaning all wire connections and putting electrical grease on them to assure good electrical connection, but don't expect the gauge to work with perfect lineal action. I find the gauge drop to full after about 1/8 tank, then drops quickly to 1/2 tank but then slows down til 1/4 tank. At 1/8 tank reading you may be very close to walking to get fuel.
All you can do is carry a gallon of fuel with you and drive the car until it is empty. Then you will know what your specific gauge is telling you.
