A certain amount of water out the tailpipes is normal, between combustion byproducts and condensation in the exhaust system, she will drip some, particualy when cold.

A blown head gasket can allow coolant into one or more cylinders, and then out the tailpipe it would go.

Water flashing to steam in the cylinders cleans the sparkplugs, one or more would be very clean and white.

You could also do a compression test, one or more would have low compression if the head gasket was blown.

A few weeks to use a few inches of coolant is not a lot, it would run just fine most likely.

I searched for cap here and didn't find anything - check the cap. It can allow steam to escape which mysteriously vanishes into thin air.

I had a similar problem a few years ago. My coolant level was going down with no obvious leak. Turned out to be very small leaks where the hoses attached. New hoses fixed the problem. Leaks were found by using a radiator tester which attaches at the cap and pressurizes the system to force obvious leaks to be seen. For a while I thought the problem was coolant leaking internal the engine. Fortunately it was something simple.
