There's nothing wrong with the original bolts, in fact, they hold up really well and usually look like they belong. But if you want stainless, get stainless.

You can use whatever body mounts you want and always switch back to factory later. Use whatever you want. Stock mounts have the most compliance (less rattle) and solid aluminum doesn't (rattler). Poly mounts are somewhere in between.
