SE Indiana has several restaurants that are known for their fried chicken (sorry you southern guys.... we know how to fry chicken right ;)). Fried just like grandma did in a cast iron skillet with lard. One of the local ones had a food critic stop by several months ago and just loved this place and did a big write up in the New York Times about it. I was driving down the interstate the other day and their billboard caught my eye. You just don't see advertising like this anymore!

I am a southerner (SW Mississippi) but I like good food from anywhere. Also would rather support small businesses when I can, and always have. Did a trip to the midwest recently, and only thing I couldn’t find that I like to eat was good biscuits and grits.

on a side note, wife and I have had high cholesterol for years. About 3 years ago, we went (back) to cooking with lard, as we grew up that way. For the last two years, all our levels are now back to normal, with NO other change in our eating habits, or what we eat, except processing our own beef.
 
I grew up eating Sunday lunch with my paternal Grandparents.
This was simple…catch a pair of hens, wring their necks, pull the head off and watch them bleed out, pull the feathers off, and hand them off to my grandmother, and my aunt.
Fry in lard and serve with garden grow vegetables.
Life was better in the previous century…and tasted better.

Funny there are a few things no one can cook like my mom, apple pie for sure, hers is the world's best. Same goes for my wife, lucky for me the wife can fry chicken! It's like Olympic gold medal blue ribbon a+ chicken :)

Shortly after my wife got married in'82 she made meatloaf and I made the mistake of saying "It's good, but not as good as momma's". That was the first and last time that I made that remark.
 
Just barely South of the Mason/Dixon...I do remember G-mom having a soup can with leftover grease she would always use on most everything.
My mother is full blooded Italian, and would fix chicken in a cast iron skillet...but was there any other way back then ?

My wife makes the best pepper steak and her lasagna is amazing with 4 different cheeses in it. Speaking of meatloaf she decided one day to use BWW parmesan garlic sauce in place of ketchup in her meatloaf. We will never make it with ketchup again!

Directions! We need directions.
That one is easy. First you get to my house, then (weather permitting) we take a 20 minute cruise in the Camaro down there. Oldenburg only has a population of 650, and Wagners is right on Main St., so it shouldn't be hard to find. Pick a nice fall day and spend some time strolling around town. Neat town.

First time my wife made me meatloaf, she tore up slices of bread, mixed it in the meat, put a hardboiled egg in the middle of the meatloaf, covered loaf with ketchup, then cooked it... was weird to me but was how they made it.
I then showed her the way we made it with Italian breadcrumbs, raw eggs, mixed well, covered in tomato paste, surrounded with carrots and potatoes...she liked it a lot better and the only way she'll fix it.

That BBQ place looks tempting 😏 .....my inner fat boy is screaming lets go

Make that meatloaf and put it on the smoker.
Smoked meatloaf started a cussing match in the powerhouse once….there wasn’t enough to satisfy everyone 😆
Many years ago i read an article about a black woman from way down south who had a dining room and parlor filled with trophies that she won for fried chicken contests i believe her name was Mrs. Stanley. although she did not reveal her secret batter mixture .she did say she soaked it in buttermilk and some other things maybe pickle juice but the key thing is she fried it in 4 lbs. of liquid 2 pounds of melted butter and two pounds of pure lard. i would bet that that tasted divine but its a cholesterol a bomb for your heart. There is really nothing better than real good home cooked Southern Fried Chicken. Alex

How long at what temp... or you use a probe ?

I don’t have anything fancy, just the thermometer on the smoker.
it depends on how much smoked flavor you’re accustomed to…
I do about 190 for 45 minutes ( old smoker and it looses a lot of heat out the door) then wrap it up and finish in the oven….as I’m typing this my sweetheart is asking why I’m talking about it when I should be doing it.
